Red wine slow roasted lamb shanks with couscous and honey soy carrots
This was yummy! The bread on the side is 'Amish friendship bread'. I was given a starter for it and it took over 10 days to complete the process.
The shanks I put in the slow cooker all day although they could of been cooked even longer.
The couscous I added olives to as I didn't have any sultanas, but it tasted really good still.
The carrots for me were the star of the dish.
Stir fry the carrots for a few minutes of high. Add a generous amount of honey and soy sauce and allow to simmer for at least 5 minutes. The carrots become sticky from the honey. Add some salt.
I made this meal for my love for a 'date night'. He seemed to enjoy it. So light the fire, put a rug down and make a good lamb shank to enjoy before summer comes!
