Cupcakes for the kiddies!!


So I have recently completed a three wk prac for uni (I am doing teaching) and for the last day I made these cupcakes for the kiddies. They LOVED them and even though we made a large crumb mess for the cleaners, they were muchly delighted in! I apologised to the boys as I only had one colour at home so all the cupcakes were pink, however seeing as they were a young class (6/7 yrs old) the boys didn't mind, in fact most of them proclaimed 'I like pink!' Overall a yummy recipe, and they arn't those boring vanilla cupcakes with no flavour and really spongy to the point of eating air, they are sooo moist and tasty! Good for kids, and adults too! The recipe is from the women's weekly classic recipes. Well worth a try!

Mint slice chocolate cake! YUM!



I made this cake for a friend's birthday. When I asked her daughter what her favourite cake was, her daughter wasn't sure but she knew her Mum loved chocolate cake and mint slice biscuits were her all time favourite biscuit. That is how this amazing cake came about! I used the good old Edmonds cook book basic chocolate cake recipe and then added the biscuits. There is a whole packet of biscuits chopped up and added to the actual cake recipe before baking, and then another whole packet on top of the cake stuck to the frosting! So all up, there are two packet's of mint slice biscuits in this cake! As you can imagine it is soooooo rich and most of us felt sick after eating a large piece each! It was just sooo yummy, minty and chocolaty and did I mention RICH! Probably a cake you should only have small servings of, or you could add half a packet only to the cake batter to make it a little less rich! I am now inspired to make other cakes out of biscuits like violet crumble cake or cherry ripe cake or bounty cake! Hmmm bounty cake would be awesome, with coconut sprinkled on top! So I challenge you, be daring! I had no idea if this cake would turn out but when it did it was worth the risk! Next time you make chocolate cake, add something a little different! It's worth it!
A great birthday celebration, and the cake made it that extra great!

Mediterranean salad!



This was for a dinner party and was rather delish'! I got the recipe out of a health book and added a few extra ingredients also like rocket. The dressing was lemon and olive oil and balsamic vinegar and worked really well! If ever in doubt with a salad, chuck some balsamic and olive oil and a bit of lemon on if you have some and you have a party pleaser!

Apple, pear and date crumble!



Guests were arriving soon,
'What should we do for dessert?' Mum said.
'Umm well we have a pear, some old apples..maybe a crumble?'
Chuck in some dates and a Stephanie Alexander basic crumble recipe and enjoy!
I did add some oats to the crumble recipe and although it was good, it could of been crunchier! If you know the secret to perfect crunchy crumble please fill me in on it cause mine normally turns out too crunchy or like this one too powdery, if that makes sense.
Even so, twas a lovely warm dessert to eat on an early summer evening.

Tomato and spinach chicken stir-fry!



This was one of my odd 'Grace original' dishes, most of which I don't blog about but I thought the pic looked good so why not I say! This was one of those 'We have one piece of chicken, a few random veggies and basically nothing in the fridge' throw together dishes. Quite nice though. I used a decent amount of tomato paste, rice noodles, soy, oyster and fish sauce (which really added a nice salty flavour) and some veggies.

Banana, date and walnut loaf!



Honestly, what can I say with this one? It is simply delicious! You simply have to try it!! Below is the recipe...So easy to make, have it hot with a cup of tea! You will thank me!


BANANA, DATE AND WALNUT LOAF

Preparation Time
15 minutes

Cooking Time
45 minutes

Ingredients (serves 6)
Melted butter, to grease
150g (1 cup) chopped dried pitted dates
200g (1 cup, firmly packed) brown sugar
250ml (1 cup) water
320g (2 cups) wholemeal self-raising flour
260g (1 cup) mashed ripe banana
55g (1/2 cup) chopped walnut halves
1/2 tsp bicarbonate of soda

Method
Preheat oven to 180°C. Brush a 14 x 21cm loaf pan (base measurement) with melted butter to grease.
Combine dates, sugar and water in a saucepan over low heat. Cook, stirring, for 2 minutes or until sugar dissolves. Increase heat to medium and bring to the boil. Remove from heat.
Add flour, banana, walnuts and bicarbonate of soda and stir until combined. Spoon into prepared pan and smooth surface with the back of the spoon. Bake in pre-heated oven for 40 minutes or until a skewer inserted into the centre comes out clean. Remove from oven and set aside for 5 minutes to cool before turning onto a wire rack. Serve warm or at room temperature.

Silverside with mustard sauce (Recipe #17 + 18 from Stephanie Alexander's cooking companion)



Grandpa arrived, the candle was lit, the table set, the plates dished up...and the moment arrives...the first bite...the first chew....and then the reaction...'hmmmm it's ok'..."yeah the mustard sauce is not like your's Mum, not even close"...."yeah the meat is good"....."yeah but the sauce is just lacking something"...

But what could beat Mum's mustard sauce and silverside? She has these recipe's that are just the best the way she does it, and she doesn't even know how she does it..she just does it! Like her meat loaf, or sticky date pudding..classic Mum recipe's..so this was a big challenge..attempting the silverside..probably a challenge I would not of attempting if I hadn't won a meat tray at the club. But regardless I did attempt it and was surprised at the amount of work that goes into making silverside. The broth has many many components and has to cook for a few hours at least, then you drain out the chunky parts of the broth and put it on to boil again. Meanwhile you have to make the other components to the dish. The mustard sauce seriously makes this dish so there is a lot of pressure on the poor mustard sauce. I think the problem was the recipe used mustard powder which turned out being quite bitter, Mum normally just uses mustard from a jar and mixes it with a white sauce. Next time I will do that! Overall though, a very flavoursome dinner..especially the meat and I definitely enjoyed the leftovers the next day! Yumm!

PAW PAW CAKE!



So growing up in Vanuatu meant I absolutely adore paw paw! It is one of those nostalgic memory-prompting fruits that make you go 'aaaawwwww'. So I had high expectations for this cake, not to mention I was very excited when Mum came home with paw paw she collected from a friends kitchen (her farmer friend grows them although they don't turn out very well)..Anyway so high expectations and high hopes. WHICH WERE TOTALLY CRUSHED! I mean yes the cake was yummy, moist, fruity, loved by all..only one problem: You couldn't even taste the paw paw..the paw paw was killed and failed to get a word in in this cake, even though there was almost two whole paw paw's in there. Anyway we enjoyed the paw paw in other ways, such as a paw paw salad and just eating it on it's own.
So my advice is eat paw paw and lots of it, but not as much paw paw cake (unless you want to eat a fruity cake with no paw paw flavour which is still yummy)
Anywho took it to uni for a picnic with the girls and we all enjoyed eating it anyway and eating the other baking the girls made. Lovely picnic with friends on a spring sunny day..

Dessert extravaganza!

On a warm spring evening, about 20 young adults were involved in a progressive dinner! Entree began at Clara, Laura and Ruth's place (bruscetta and Zarta), then to Megan's for home made lasagne (which was delicious thanks Megan for bringing me some). Then the friends began arriving at mine for dessert, they were full and tired but thankfully they still ate (there was lots of food). So before I show you the menu, I would like to thank Mum for cutting up the strawberries and whipping the cream, offering people tea when I was too exhausted and helping with various things, thank you to Elise and Natalie who helped with coating the fritters in cinnamon and sugar, and thanks to everyone for coming, eating and being awesome!

So I wanted to make something that people could nibble while they sat around. I found these sugar and cinnamon fritters in Donna Hay's season cookbook. They were soooooooo easy to make and really nice, especially when hot. The only challenge was to keep the oil at the right temperature. If only we had a gas stove! They tasted quite similar to donuts, although maybe the texture was a little more dense. Donuts can tend to be very oily and make you feel like a fatty and thankfully these were not like that at all!



So for dessert they were two main components I guess, not including fruit, cream and ice cream. So I though the safe option would be to make something with fruit for the healthy nuts and then something with chocolate (you cant go wrong with chocolate). So I made a mixed berry clafoutis also from Donna Hay's seasons cookbook. Everyone who had a piece really liked it, although personally I was dissapointed. When discussing it with Natalie, I came to the conclusion that it was the custardy eggyness of it that I didn't like. It was like a custard berry tart I guess, and seeing as I had no idea what a clafoutis was I am not surprised it came out different to what I expected. I think I am more of a fan of mixed berry tarts with shortcrust pastry, something with a little crunch and less soggy. At least it looks pretty...



Finally, the star of the show: dark chocolate and coffee puddings (although the coffee flavour was rather subtle). A Jamie Oliver recipe..



These were flippin amazing! Ruth, who is dairy intolerant even had one and we wrote a song about it. It was a rendition of U2's 'With or Without you' about how Ruth can't live with chocolate or without it. She felt a little sick after but said it was totally worth every mouthful! What a darl!

These were really good and even better the next day! They weren't too overly sweet as the dark chocolate and coffee made them a little bitter. Which meant you could eat more of them which is a bonus. It was a long process to make them though and seeing as I was making a double batch it took longer. I had to freeze ice cubes the previously day of melted chocolate and coffee which were placed inside the mixture being baked. There was three components to the mixture made in separate bowls and combined at the very end. We used cups to bake them in, although ramekins would be great also (need to buy some of them). We only had 6 cups so Mum and I were searching for any oven proof small bowls to use, therefore there was chocolate puddings of all shapes and sizes. Once cooked you can either eat them in the cups of turn them upside down onto a plate and cut them open to let the chocolate and coffee ooze out!



Overall a success of an evening. I am blessed with lovely friends and company! Thank you to all my friends for being in my life and eating my cooking, even when its scary (e.g when Elise found a cockroach in a brussel sprout I cooked: I have come a long way since then don't worry!).

Hoi Sin, ginger and chilli asian stir-fry with fried polenta..




So this was tonights creation! A pure Grace original! hehe..The beef stir fry has a bunch of ingredients including Sambal Oesek (one of my new favourite ingredients), ginger, soy sauce, hoi sin sauce, oyster sauce, fish sauce, lots of sauce, veggies (carrot, cabbage, pumpkin, leek, onion, bok choy) and chilli of course. Mum and I sat there with the tissue box, our noses running a stream because it was rather spicy. Mum said it was great for weight loss! haha..so she was happy, being on a diet trying to loose weight for Andrew and NIna's wedding. The polenta was rather bland but isn't polenta always bland? It soaked up the sauce well though and the flavour of the stir-fry compensated for the polenta blandness.

Mum really liked the dish as did I. It turned out well! Wasn't sure how asian flavours would go with polenta but not bad! Not bad at all!
Now I am FULL FULL FULL!

Cheeeeeeeeeese fondue round the fire!



Firstly THANKYOU to Natalie for my fondue pot, I love it!! Secondly I was rather disappointed with this cheese fondue! Maybe I am just not used to the really strong white wine flavour, but it just wasn't as cheesy as I would of liked! Too much wine I think, although Natalie disagreed and was disappointed I added more cheese half way through! Megan suggested next time I use a milder cheese such as tasty instead of vintage with the swiss cheese. I think the vintage cheese flavour was a little overpowering, along with the wine, the poor swiss cheese didn't get a look in! The crusty bread was the best dipper for me! I just need to adjust the recipe next time I think. milder cheese, less wine.

A lovely evening with friend around the fire as winter ends, looking forward to spring baking and summer BBQ's!

Coconut, walnut, oat cake with chai latte and dark chocolate gnash!





So this was one of those cake's that came to be through a need to use up some gnash! So I had chai latte gnash leftover from the macarons and some cream to use up also. So I had a picnic to attend the following day and I asked myself what can I make to put this gnash and cream on? So I ended up making up a dark chocolate gnash with some choc in the cupboard and then started the process of elimination. Brownies? no, date slice? no, any type of slice? no, biscuits? no, shortbread? no, chocolate cake? no, sponge cake? hmmm maybe..although plain old sponge cake is a little boring so I found a coconut sponge cake recipe, and chucked in some oats as well! The cake came out well. Chucked in a layer with a mixture of the gnashes and some chopped walnuts, made a pretty swirly pattern on the top with the two gnashes and that my friends is how you create happy picnickers! I was actually surprised at how well this cake tasted! A random mix of flavours but they all complemented one another! YAY

Baileys and banana bread and butter pudding!! yummm



Well this one is from a Jamie Oliver cookbook and it was a hit! Everyone at my going away party loved it! I have never been a huge fan of bread and butter puddings, they can be kinda sickening! However this one wasn't too sweet and overly milky. I think the bananas really helped. My only disappointment was you couldn't really taste the baileys and for the amount we out in there, this was a little surprising. A bit of a waste really, but there were some people who said they could taste it!
Overall, a great success!

Chai melting moments!




Its 10.30pm and I have uni the next day but that did not stop me! I had a whole bowl of chai flavoured ganache left over from the macarons Steph, Will and I made and I was feeling inspired to make something with it. There were still many macarons in the fridge so I decided to use the ganache with something else. First I thought some kind of slice or cake would be good and I could spread the ganache over the top or use it as layers in a sponge cake. However then I remembered my Granny's melting moments and how delicious they were and I had the idea to make them, although the filling would be a little different. Granny's melting moments had a more buttery vanilla flavoured filling but I must say these melting moments were still divine. Probably not quite at Granny's standards but I don't think I will ever have a melting moment made by anyone else that could compare to Granny's. They turned out really well, I was actually impressed with myself! They are sooooooo simple to make and sooooooo yummy, probably because they have a whole cow's worth of butter in them!

So our fridge was full of yummy delicate delights all week! Poor Mum is on a diet and couldn't have any so she froze some for when her diet finishes! Funny one she is! I enjoyed savouring the moments with friends and guests many times throughout the week with a yummy cup of chai tea. Loved sitting in the late winter sun as Spring slowly creeps closer. If there is one biscuit you make in your life, make a melting moment! And have a melting moment in the sun!

Macarons!! Heaven!!




Well how divine were these?? well you didn't try them I guess so you won't know but I tell you now they were amazing!!
It all began when my beautiful friend Steph (an apprentice pastry chef) was visiting for the week end. I was at work on a fine Saturday morning when my brother Will had the brilliant idea to make macarons and asked Steph the expert to teach him. Even though she makes them everyday for work she still was happy to make some! Bless her lovely soul! Anyway so off they trot to the shops and begin on the ganache. So I arrive home in the afternoon only to find Will has deserted the project to go visit his lovely fiance in Sydney. So Steph and I began the long almost four hour process of making the shells, piping them out, baking them and after they cooled, adding the ganache (chai flavoured by the way). The ganache was made by boiling chai leaves with cream over the stove and also incorporating white chocolate. It was delish!! Steph asked me what colour I wanted to make the shells. Her chai macarons at work are a lovely brownie colour but we only had pink food colouring so pink they were! haha..

Thank you Steph for teaching me about macarons and Will for initiating the idea! And thanks Steph for being gracious and making macarons with us even on your day off! I love you and cherish your beauty and creativity! It twas a lovely baking experience with a lovely friend. mwa!

Recipe #16: Chocolate and walnut brownies!!




DEAD SET EPIC BROWNIES!!

Think about those words for a moment! DEAD= eternal...yeah I got nothing..SET= well set, cooked perfectly, moist....Epic= one of a kind, adventure, to remember..and Brownies= awesome chocolatey things!!
Ok you are probably thinking did this girl put something in her brownies?? No I didn't I am just in a bit of an interesting mood!!
Anyway back to the brownies..like seriously if you want an epic moist lovely brownie recipe to make you feel sick cause you ate too many of them cause they are sooooo good..then this is the recipe for you!!

So how did these amazing brownies come about?? Well the incredible, amazing, wonderful Ashley was coming over for a late night cuppa and I thought I should wip up something quick and easy and these were just that! But also delicious!
Ash gave them a 9 out of ten..her comment was that they definitely need the nuts or they would of been too sweet. I agree! The nuts add some crunch and nice contrast to the rich chocolate. The recipe gives the option of using bittersweet chocolate or nuts, I used a bit of each!

Very moist (probably due to the cow full of butter used) and addictive. I had one too many! With a cup of tea, a good friend to chat with, great music to listen to and a warm room to chill in..what more do you need in a winter evening?

Recipe #14 +15: Spicy fried pork balls with garlic and ginger dipping sauce!



So it was the evening we had all been waiting for! The celebration on our minds, especially Mum's! It was her birthday! I won't say how old she turned or she may be cranky! Anyway I was contributing to the menu with some sort of starters. I came across this pork ball recipe and thought I would give it a go! I made these and also some cous cous for the mains.

So what can I say about this dish! Firstly very time consuming (I was up till midnight), especially seeing as I had to finely dice all the ingredients as we don't have a food processor! grrr! I can't wait till I have my own kitchen and can have an awesome food processor! maybe a red one.
The pork balls had a lovely flavour! just beautiful! I was making them the night before the party and we probably ate almost a quarter of them that night! Well mainly Will stealing away as quick as I could fry them! The texture was ok, I would of preferred them to be a little crispier on the outside. Maybe baked in the oven would of been better, less time consuming and less fattening also!
The dipping sauce was a little disappointing, in that I didn't think it matched the pork balls very well. Would of been great with some seafood though!

Overall a great party starter and all of them were gobbled up within 15 minutes or so.
A nice way to begin a evening celebration of a wonderful lady! Happy Birthday Mum!!

Recipe #13: Many kinds of muffins!


Hmmm not sure what I think about this muffin recipe. The recipe calls for a lot of vegetable oil which yes, it does make the muffins crunchy and crusty, although it takes away from the sweetness a bit too much I think. I have used other recipes I like better, especially one from the cafe I used to work at! That recipe is gold!

The good thing about this recipe is that you can use it as a base recipe and make as many different flavours as you like. I doubled the recipe as I need lots of muffins to sell at uni tomorrow (raising money for cancer council). I made three different flavours: mixed berry, double choc-chip and my favourite, banana, date and walnut. No I am not a pig and yes I have tried all the flavours as I made some mini muffins as well, just for me to taste test. hehe. It will be interesting to see which flavour is the most popular tomorrow!

I don't think I would use this recipe again for sweet muffins, a little too oily and bland (maybe needed some vanilla essence or salt). I would use it for savoury muffins though and just omit the sugar. A good foundation recipe for bacon and cheese muffins or something like that.

I enjoyed making up flavours and experimenting on a rainy windy day!

Recipe #12: Gingerbread biscuits!!



Well what a lovely day to be home, baking lots of yummy things, drinking tea, listening to Katie Noonan and cranking the heater! Yes you may have guessed it is pouring outside and the wind has just picked up. Looking out the window everything is grey! It is suppose to be like this tomorrow too which is a bit of a shame because tomorrow I am hosting 'Australia's biggest morning tea' at uni to raise money for the cancer council. Therefore I have been baking today so there are things to sell tomorrow. I have many wonderful fiends who are baking yummy things too!

So these gingerbread biscuits I am thinking of selling for about 20 cents, or maybe 50 cents. They are only small and they taste pretty yummy; nice spices! I am a little disappointed with the texture of them as they are rather hard and I prefer softer biscuits. I think there is nothing I could of done to change this as the recipe states they can be used as christmas tree decorations and last a while. I am assuming that if they are harder, the better they will keep. It was quite a long process to make these as you have to chill the dough overnight and then there are many steps involved when rolling and cutting them out; in and out of the fridge a lot waiting for time to pass!

Anyway I will see how they sell tomorrow at uni! Hopefully they are a hit! Nice with a cuppa on a chilly day, which tomorrow will be!

Recipe #11: Beef Stew! Another delicious evening at my household!



Hmmm..what to say about this stew. I have mixed feelings and there were mixed reviews! Ashley said it was too spicy for her (softy!), although Will and I thought there could of been a little more spice! We also thought it was a little bland! Some more spice/herds could of helped. Mum, being a little tipsy from the left over wine, ate gleefully, giggling away and being as pleased as ever with the flavours, giving it a 9! She was, however a little disapproving of the cost this blog is causing her, seeing as the meat was 12 dollars alone, so I gave her 5 dollars towards it and also told her I would mention her in my blog! So attention everyone ! I would like to thank my mother for her CONTINUED support of this blog, as she is a financial sponsor and official food critic! haha! I personally don't know what she is complaining about! She gets to eat lots of yummy food! So thanks Mum.

Ash also gave a 9, so glad the guest enjoyed it! Always a good thing.
I would probably give a 7. I think some crusty bread or some rice would of been good to soak up the juices. I didn't serve bread with it as we had just had the bruschetta, but next time bread would make it I reckon! Could of been more flavours in the stew. In saying that, the meat was awesome! Chunky tender beef on a chilly evening as the fire crackles away in the other room! I love it! Thank you God for cows!

Made it to the tenth recipe!! Bruschetta!!



WOW this was probably the best bruschetta I have ever had (excluding the one Kristina made me at her house with home grown tomatoes and basil: and she is italian so she knows what she is doing)!! but seriously one of the best ever and that says something, seeing as I order it quite often at restaurants! I had a piece with Mum and she stated 'this is the real ma-coy!'. I couldn't resist and had another when Ashley arrived! I could probably have another piece now, even at 11.15pm! I am using a lot of exclamation marks!

The recipe doesn't specify much about the topping as you can use many different toppings. I stuck to the traditional tomato topping and the recipe only said tomatoes and red onion. I also added basil, balsamic vinegar, olive oil, salt and pepper. The bread made it though! Crunchy hot italian bread rubbed with garlic and salt and drizzled with olive oil!

Simply delicious! Fresh flavours! complementing textures! Seriously try it!

Recipe #9: Carrot Cake!!! Seriously yum!




The guests waited in suspense as the frosting laced the cake and the candles were lit! Lily shuffled in front of me trying to protect the flames from being blown out, as I carried the masterpiece into the fire-lit lounge room. Happy Birthday sounded to the heavens and then the cake was served, oh and alas what a sensation it was! (I know alas doesn't fit in that context, but we were playing a game last night were you make up your own fairytale story thing and alas was said often: that somehow justifies it I guess, haha).

Moving on, this cake is divine! When Natalie exclaimed that carrot cake is one of her favourites, I was delighted as carrot cake (and cheesecake) are probably my all time fav cakes! I wanted a carrot cake for my 21st but Mum said no-one will eat it as it's not a popular choice! WHY NOT people? Like seriously, how good is it!! and the cream cheese frosting yummmm!!

In the past I have made carrot cake and it has always been too dry or too moist that it takes like your eating oil! This recipe, however was perfect! Loving and moist but not too much! When I asked everyone what they thought, it received many 9's out of 10! Natalie's only criticism was that there could of been a little less frosting (or icing for Nat's sake) although this comes down to personal choice. I purposely made double the amount of cream cheese frosting as I love that part! with the walnuts also= so good!

My only criticism would be to grate the carrot finer. The chunkiness was fine, although I think the flavour would of been more evenly spread and more enhanced if the carrot was grated finer.



Definitely a successful recipe for a lovely birthday celebration for a lovely girl! Very fitting: a grand recipe for a grand evening!
Sitting round the wood fire on an Autumn evening, laughing and chatting with friends about life, the universe and everything with some carrot cake and ice-cream! Awesome!

Recipe #8: Rhubarb, apple and date crumble!!




'This dish could have potentially lost us the challenge...'
With masterchef in the background, I sit here with a full belly of 2 servings of sweet rhubarb, apple and date crumble!
So this dish was full of winter flavours...although it would of been really enhanced with a cinnamon stick!

So Natalie's critique:
Her thinking was that the flavours were beautiful, the down side though was the textures (which I agree) and a little too sweet. The sweetness I blame the recipe for, as it said 'a decent amount of sugar' which could be taken in many ways. The texture was a little too mushy; I think it would of been better if I simmered the fruit for less time before putting it all in the oven. Natalie has the same opinion as me when it comes to texture in this dish! When too mushy, it turns to baby food, and you want the flavours to linger! and come on!! CRUMBLE should be CRUMBLY and crunchy and this was not crunchy enough! And according to masterchef, texture in a dish makes up 50-60 % of the final product!

Although the texture could be tweaked, this dish was a lovely way to finish a sunny gusty Autumn day! I love the dates! Loved the crumbly flavour! Thanks to Steph for making rhubarb crumble earlier this week and making me crave it! hehe

Oh and Wills opinion: More crumble! as a man would say! They want less fruit and more gutsy stuff! haha...although Nat and I do agree!

So 7's and 8s out of 10> a great success! Although this post sounds like a negative critique, this crumble was deeeelicious!!

Recipe #7: Chicken with red-wine vinegar and tomato (which was actually white wine vinegar)


Well this recipe turned out quite different to how it could of turned out if I followed the recipe more correctly!
There were a few ingredients I didn't have and seeing as I have a million assignments for uni, I figured I don't have much time to go to the shops...also not much time now as must get stuck into uni work so I will make this quick!
So I had no red-wine vinegar, so used white-wine vinegar instead which seems to work fine, although I can't compare seeing as I haven't tried the real recipe! I also had no shallots so used spring onion and brown onion instead, which worked well! I LOVED the chunks of garlic! really yummmm!
I also added some sultanas which became massive and juicy and burst in your mouth! Added sultanas to saucy dishes has became my new obsession! I cooked the dish a little differently..in the oven for about an hour after browning the chicken with some seasoned flour..
So I sort of modified the recipe a little..but isn't that what we are suppose to do? Use our creativity and all that!
It turned out well..the vinegar was quite a strong flavour and a little overpowering..maybe using the right one would of helped! hehe
Overall, a yummy dish on a windy cold lonely Autumn night!

Recipe #6: Self saucing chocolate pudding...


mmmmm chocolatey goodness with walnuts and coffee and some good mates after some spicey thai..what more could you want in a Saturday night? Oh I know!! maybe some cream to go with it!! yeah bad joke I know!

Anyway was quite a success! Well if you could judge the whole pudding gone in less than half an hour a success, then this was one! This 'success' was largely indebted to Will for taking probably a quarter of the pudding!
Unfortunately I don't think that is all that measures success...the quality of the pudding certainly is also important. In this case, I thought the sauce aspect kinda let me down. Let me explain. My view on self saucing puddings is that it should ooze chocolatey goodness and be really moist, however this recipe for me was not saucey enough. Steph also agreed with me in this aspect and thought it could of been more saucey, however she did give it an 8 and a half out of ten. So despite the lack of enough sauce, it was still very yummy! Especially with some cream and a good chat, a nice warm moment! The walnuts I loved; added some nuttiness and as Steph said, they brought out the other flavours also.

Overall a lovely end to an Autumn evening.

Mieze's plum cake! Recipe #5


WOW did this cake rise or what!!?? The oven was smoking like crazy and probably about a 20th of the cake leaked out the bottom of the spring form tin. Mum thinks I put the tin together wrong which could probably be true! But thankfully it turned out great! It is basically a really buttery sponge cake with plums and a little saucy-ness on top! Love the cinnamon!! Love the plums!! Love the crunchy cinnamony top! The sponge cake part was really fluffy and yummy, although I was saying to Will for the amount of sugar and butter in it, it doesn't taste that bad for you! Which is kinda a waste! If you want to eat some really naughty dessert you want to make it count, if you know what I mean! Like if you were gonna eat that much butter and sugar, I would prefer some really rich divine delicious..thing..Does this make any sense?

Anyway despite my big rave, I enjoyed the cake and hot out of the oven with some cream...delish..below is a pic of my plate after I massacred it a little!
Our guests, Bev, Jeff and Galley also enjoyed it, giving it a 9 out of 10!

My tip to you would be to make sure you check the middle with a skewer as mine took about an extra 20 mins to cook through to the middle!
A nice Autumn dish using juicy plums that are in season at the moment! Makes me think of leaves falling off trees and the chill in the air! Kinda a mix between summer fruits and hot winter fruit pies! Try it...it's goooood (probably cause its full of butter and lots of yummy things..)

Recipe # 4: Vegetable Curry...a grand success!!


So 10 out of 10's all around for this flavour filled beauty! Mum and Will said it was the best dish yet which is rather surprising seeing as we are quite a carnavourous (is that even a word?)...meat eating household! Mum called on the way home from work and said she was gonna go buy some meat for dinner, in which i replied 'no its ok I am making vegetable curry'...'So should I buy some meat to go with it?'....I replied 'Mum, we can eat a meal without meat!'......SHOCK HORROR!! haha no not too much shock and horror..that's abit of an exaggeration!

I would probably give a 9 out of 10 as it needed abit more punch I think..a little bland at times..maybe if i had curry leaves that would of helped..

Anyway the aroma of this dish is wonderful! As the spices are blended together with the oil and mustard seeds and onion! WOW!! The final product is very tasty! Nice blend of coconut milk and spice and yumminess! Didn't have any eggplant so had to forgoe that, however I did add some sweet potatoe and probably quad-rupled the amount of garlic and ginger..I love my garlic!

Even without meat this dish is so flavoursome and a good one for the vegetarians!

#3 Joe's spaghetti with prawns


Sorry Joe but not many good thoughts towards your spag!! Man I LOVED IT!! But I love simple flavours! I enjoy some plain boiled rice with salt and pepper or some spaghetti with olive oil and garlic etc but Mum and Gramps weren't too impressed....My theory is people are so used to have a million flavours and sauces chucked into everything that they can't appreciate simple and authentic flavours! Mums first reaction was to jump up and grate some cheese to add to the flavours, although in my mind thats simply a crime!! CHEESE ON OLIVE OIL SPAG WITH PRAWNS AND BASIL!!! CRIME!!!! Grandpa agreed with Mum that a seafood creamy sauce would add lots to the dish...and as you can guess their scores were a little miserable...a 5 and a 6 out of 10!!
Me on the other hand...I love the basil, rocket and olive oil combo and the garlic!! yummmm..I loved being able to taste the pasta for a change instead of just tasting sauce!! Thankfully Will arrived home and ate the leftovers and also appreciated the simple flavours! It was nice for a change..In saying that however, I probably would do this one a little different next time...maybe some pine nuts or lime or even some bocconcini (I know this is cheese but its not tasty!! Come on!! Tasty cheese with this dish!!)....
Anyways a nice simple dish! SO EASY AND QUICK!! Beautiful!!

TOMATO SOUP WITH BASIL AND CROUTONS...


So was thinking entree' so thought soup! Plus there were lots of tomatoes I bought the other day to use up so worked well!
I really have never liked tomato soup so was interested to see how my taste buds would like this one! It was rather easy to make, except that I made quite a mess trying to use a sieve instead of a food mill seeing as I don't have a food mill....let alone know what it is!! haha
So anyway when the sieve didn't work, seeing as I am guessing we are suppose to be seperating the tomato skin and onion from the soup although most of the nice chunky tomato bits didn't go through the sieve either...ANYWAY I ended up using a hand held blender which didn't really blend the skin or onion anyway...so chunky soup it is!! haha!! which I love anyway! never been a fan or watery or non-chunky soup so I didn't mind that my attempts to make it smooth and silky didn't work!
Anyway Grandpa and Mum gave it an 8 out of ten and had rather positive feedback (unlike the pasta recipe to follow in next blog)...
So even I enjoyed it..it wasn't like an explosion of yumminess and goodness or anything but I guess rather nice...
Worth a try if you have some lovely juicy tomatoes and the smell of butter, onion and tomato simmering away is divine!!

The journey begins..


So my first recipe (for this blog that is!)?? what do I create? Well lots of lemons in the fridge so off to the lemon section..mmm LEMON SLICE it is!!

So this recipe went well although would of been better if I had a food processor like the recipe says! Mum says we are getting Grandpa's soon seeing as he never uses it so that will be fantastical! A rather simple recipe, easy to make, although I find 20 mins in the oven for the base was too much, so took it out at 15 as it was starting to go really brown..Apart from that a nice recipe..three layers are formed although you only have to make two so thats a nice touch!

So already Will and I have eaten too many pieces so now off for a bike ride! haha
